First let’s’ us look into the definition from Wikipedia-- A stab vest, or stab proof vest is a reinforced piece of body armor, worn under or over other items of clothing, which is designed to resist knife attacks to the chest, back and sides. Stab vests are different from bulletproof vests, most of which offer protection against firearms but afford little against stabbing with sharp-tipped objects such as knives; most stab vests afford less protection against bullets, particularly those of high caliber, but are designed to prevent serious injury by prohibiting knife penetration beyond a few millimeters. Stab vests are also needle and slash proof.
NIJ 0115.00 standard is one of the world leading guideline for stab resistance. The purpose of this standard is to establish minimum performance requirements and methods of test for the stab resistance of personal body armor intended to protect the torso against slash and stab threats.
This standard is based on technical work performed by many organizations: in the United Kingdom by the Police Scientific Development Branch, and in the United States by the National Institute of Standards and Technology and its subcontractors. (Also UK has it’s own standard which is HOSDB 39-07-C)
The scope of the standard is limited to stab resistance only. The standard does not address ballistic threats, as those are covered by NIJ Standard–0101.04, Ballistic Resistance of Personal Body Armor. The standard does not directly address slash threats;
HOWEVER, TESTING HAS SHOWN THAT STAB THREATS ARE BY FAR THE MORE DIFFICULT TO DEFEAT, AND THAT BODY ARMOR CAPABLE OF DEFEATING STAB THREATS WILL PERFORM SATISFACTORILY AGAINST SLASH THREATS.
